Hello! It's the beginning of December, and, as such, the beginning of mince pie baking. This batch turned out a little different than usual, but after having been victim to a heavy dose of icing sugar and presented on a pretty Christmas plate, my First Mince Pies Of December could be called home-made. After all, they tasted delicious! My aim this December is to make at least one batch a week, as I find the process quite stress-relieving and it's definitely worth it for the end result; getting to eat them.
Due to lack of time, I cheated a little and used ready-made pastry- sorry! Once rolled out and cut into scallop-edged circles, I shaped the bases in the deep-set tray and filled with mincemeat. However, to add flavour, I mixed a little orange zest into the mincemeat before spooning it into the bases. I settled for the classic circular tops (I'll experiment with stars next week!) and glazed with beaten egg before popping into the oven. Always the signal of the start of Christmas Season!
